Summer may be (un)officially over, but I am trying to hold on to it as long as I can! Today I am bringing you one of my absolute favorite summer dishes. I make this every week, and it is super easy to make, and super healthy. You would not think that watermelon and feta cheese go together, but once you taste it, you will see just how delicious it is. The saltiness of the feta and the sweetness of the watermelon counteract each other and bring you amazingness (Yes, this deserved to have a word made up for it) in your mouth.

The recipe is simple and does not require a lot of time. You can tweak the recipe, add or subtract to your taste, and enjoy the last little bit of summer!

Ingredients

O  2 cups of watermelon (cubed)

O  1/2 English cucumber (peeled, hollowed)

O  1/4 or less of a red onion (thinly sliced)

O  4 fresh basil leaves (chiffonade)

O  2 tablespoons of red wine vinegar

O  1 tablespoon of extra virgin olive oil

O  Crumbled feta cheese (amount will vary depending on your taste)

O  sprinkle of sea salt (optional)

Directions

O  In a large mixing bowl, combine the watermelon, cucumber, and onion

O  In a separate smaller mixing bowl, combine the vinegar, and olive oil

O  Add the bowl with the dressing to the bowl with the watermelon

O  Sprinkle with feta cheese and sea salt (optional)

Again, you can add or take out whatever you like. I personally like extra cheese and cucumbers but it is up to you! So on these last few balmy summer nights, buy a watermelon and make this delicious salad!
